You read that right…HEALTHY Chocolate chip banana muffins!!! I stumbled upon it when I was looking for clean eating recipes, and it was love at first bite. These muffins are whole grain, no butter or sugar, and they taste delicious. My kids love to make them, especially my daughter, and they beg to eat them for breakfast, lunch, and dinner. They could be even healthier without the chocolate chips, but who doesn’t love chocolate chips (plus, that is part of the attraction for my kids)!
My blender broke a few years ago, but we have a nutribullet. This worked great for grinding the oatmeal and liquefying the bananas!
Assemble all your ingredients!
Start by pre-heating your oven to 400 degrees.
I usually double the recipe because we go through them SO quickly!
Start by putting the oatmeal in the Nutribullet and grinding it down to look like flour. Then empty the container into a bowl.
Next, I grind up the ripe bananas in the Nutribullet until they are liquefied.
The kids like to help with the measuring ingredients, stirring, etc. I like to give one of them the job to put the muffin liners in the trays. This keeps at least one of them busy, and then they get to pick the color liners (it’s the little things)!
Then I put in the rest of the ingredients into the bowl (eggs, greek yogurt, honey, baking powder, baking soda, vanilla, and kosher salt). I stir it up until it is well combined, and then add in the chocolate chips. Depends on how the kids have been acting on the amount :).
IMPORTANT: Spray the liners with non-stick spray before you put the batter in the muffin tins! They will stick otherwise (proof of their healthiness!).
Bake them, let them cool, and then enjoy 🙂
If you are not going to eat them within a few days, then I suggest putting them in the fridge for storing (not usually a problem at my house).
