Anyone need a quick and easy dinner? How does 3 ingredients sound? A Slow Cooker makes it all so easy! A version of this recipe makes frequent appearances at our house, but this combination has proven to be extra tasty! Here’s the quick and easy recipe for Chipotle Chicken!
- Taco Seasoning
- Aldi Chipotle Ranch Dressing
Grab your Slow Cooker and spray the inside with non-stick spray.
Next, chicken! I have used frozen or fresh and breasts or thighs…just grab whatever you have available! I typically buy organic boneless chicken breasts and thighs from Costco. The individual packages are so convenient! I usually make ~1 lb. of chicken. Typically I throw in frozen chicken (who remembers to thaw it??)
On top of the chicken layer the taco seasoning (2-3 T per pound). Keep this homemade taco season on hand for all my versions of this recipe. Make it ahead (4x the recipe), label it, and store it with your other spices for easy access when you need it!
Lastly, the Chipotle Ranch Dressing (~3/4 bottle per pound) gets poured on top of the chicken and taco seasoning.
As it cooks, give it a stir. I usually cook it about 4 hours on low for frozen chicken. My Slow Cooker runs HOT! If it is thawed then 3 hours on low would probably do it! Adjust based on how hot your Slow Cooker runs.
After the chicken is cooked through shred it and leave it in the Slow Cooker until you are ready to eat.
Voila – Chipotle Chicken can be put on nachos (favorite for the kiddos), tacos, or salad! Top it with cheese, shredded lettuce, avocado, plain Greek yogurt, salsa, red peppers, onions, or any other topping that comes to mind! On salad, I like to crush up a few tortilla chips to layer on top of my Chipotle Chicken Salad (totally forgot this add until half way through dinner tonight!).
Note: Try to substitute plain Greek yogurt for Sour Cream – healthier and tastes the same! My kids cannot tell the difference either!
